I know I’m not the only college student that’s addicted to Chipotle, Qdoba and Taco Bell. The problem is, we can’t always afford eating out, or the large calorie load that normally comes with a trip to these restaurants. If you need your Mexican food fix, but are watching your weight and your wallet, this double bean dip is a match made in heaven.
Bonus: it’s filling and takes less than ten minutes to make!
You’ll need:
Microwave safe bowl
½ cup spicy fat free refried beans
2 tablespoons light sour cream
4 tablespoons Desert Red Pepper Corn Salsa
¼ cup taco blend shredded cheese
1 ounce (serving) Baked Tostitos Scoops
Directions:
1. Heat refried beans in the microwave for one minute and stir.
2. Add sour cream and salsa and mix again.
3. Heat for a minute and a half in the microwave, stopping to stir ingredients as needed.
4. Top with shredded cheese and snack away!
