Making Halloween treats usually means having to indulge in the sugary, sweet snacks. But this Halloween, do more than that. Valley has a recipe that you can make for you and your roommates, or for any Halloween guests.
What You’ll Need:
½ cup cooked brown rice
¼ cup olive oil
½ garlic clove (chopped)
1 package of ground chicken
1 teaspoon salt
1 teaspoon pepper
¼ cup chopped fresh parsley
¼ cup onion (chopped)
½ teaspoon chili powder
1 cup chicken stock (divided)
¼ can of diced tomatoes (16 oz)
1 Orange Bell Pepper
1 bag of shredded Monterey Jack cheese
This recipe makes one stuffed pepper, so multiply it by the amount of people you will need to feed. For stuffed peppers, most people use ground beef, but Valley used ground chicken instead for a heart-healthy alternative.
What to Do:
Cook a package of brown rice as directed by the packaging. In a pan, combine the rice, olive oil, onions, garlic, ground chicken, salt, pepper, parsley, and chili powder. Drain any liquid out of the pan. Then, add the chicken stock and diced tomatoes and mix well.
Preheat your oven to 350 degrees.
Cut the tops off of the bell peppers and then empty out the insides using a knife and a spoon. Then, just as you would a real Jack-O’-Lantern, cut out a face on one side of pepper. Put the peppers in a baking pan and then fill the pepper with the concoction you whipped up on the stove. For a really delicious meal, add a sprinkle of shredded Monterrey Jack cheese on top. Put the pepper top back on, then add a little more chicken stock into the pan. When the oven is heated, throw the pan in there.
Now set your timer, watch a portion of Hocus Pocus, take your Jack-O’-Lanterns out of the oven after 45 minutes, and get ready to be just as stuffed as your peppers.
